Goji, Strawberry & Cacao Nib Buckwheat Porridge,


Looking for a grain free breakfast? Did you know that buckwheat isn’t a grain but a relative of the rhubarb plant? This is a fantastic alternative to oat porridge and even though it’s much lighter it keeps you full until lunchtime. You can add whatever fruits you like, these were just my pick.

Here is the recipe:

Ingredients: 1 cup of raw organic hulled buckwheat, 2 cups of water, goji berries, strawberries & raw cacao nibs, 1 teaspoon of organic vanilla extract, 1/2 teaspoon of cinnamon, honey or maple syrup to sweeten it (optional) & almond milk.

Method: Without the lid, bring to boil the buckwheat, cinnamon, water & vanilla extract then reduce heat to a simmer. Simmer until buckwheat has absorbed the water. Let sit for a minute or two, then serve & top with honey or maple syrup, strawberries, goji, cacao nibs & almond milk.

Yep it’s that easy!
